Sub soil: Limestone and clay

Alc: 12,8%

Vinification :

Night harvest. Destemming, pneumaticpress, soft light crushing at 7-8°C to avoid coloration, alcoholic fermentation at low temperature, ageing in tanks.

Tasting notes :

Beautifully pale salmon colour, bone dry, rich and rounded creamy palate with a good structure and a bite of acidity, a touch of vinous warmth on finish and a little grip too.

Food pairing:

On its own, as an aperitif, excellent with cooked seafood, duck à l'orange! Guinea fowl with citrus fruits, sweet-sour dishes, Thai or other spicy food, goat cheese, also strong flavoured cheeses: e.g.? wensleydale, farmhouse cheddar.

Drinkable now, can be kept 3 years.

Recommended serving temperature: 8°C
